Recipe: Spiced Cauliflower “Couscous”‏ From Love & Lemons

It’s well-documented on this blog that I love to try new recipes. When I saw a recipe from a blog I enjoy, Love & Lemons, which replaces traditional couscous with cauliflower, I knew I had to try it.

I ended up making a few minor substitutions due to supermarket availability to include pistachios instead of hazelnuts and dried cranberries instead of currants. I also used orange zest instead of dried orange peel. Suffice to say, I was very pleased with the end result. It easily can replace a main dish, or work as a side dish with meat, chicken or fish. It also keeps well over the course of a week in your refrigerator.

It’s also worth noting that I pulsed some of the cauliflower very fine like cous cous, but I also left some pieces a bit larger for texture, which is why my photo above looks so different from the Love & Lemons blog. I also put a bit of sriracha on top (well, the UK equivalent I could find at my local grocery store), as I didn’t have red chili flakes.
